INGREDIENTS
2 pounds potatoes (such as Russet or Yukon Gold), peeled and cut into chunks
1/2 cup grated Parmesan cheese
1/4 cup butter
1/2 cup milk or cream
Salt to taste
Chopped fresh parsley for garnish (optional)
Instructions:
- Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt to the water. Bring to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are fork-tender, about 15-20 minutes.
- While the potatoes are cooking, heat the butter and cream in a small saucepan over low heat until the butter is melted and the mixture is warm. Add cheese and allow it to incorporate to the mixture. Keep it warm until ready to use.
- Once the potatoes are cooked, drain them well and return them to the pot.
- Mash the potatoes using a potato masher or a fork until they reach your desired consistency.
- Gradually pour the warm milk mixture into the mashed potatoes, stirring until smooth and creamy. Add more milk if needed to reach your desired consistency.
- Season with salt to taste.
- Transfer the mashed potatoes to a serving dish and garnish with chopped fresh parsley if desired.
