A BOWL OF MUSHROOM SOUP


Mushroom soup is a type of soup made primarily from mushrooms. It can be prepared in many different ways but typically involves cooking mushrooms with onions, garlic, broth, and cream or milk. Ingredients

  • 500g mushrooms, sliced (use a mix of different types for depth of flavor)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the mushrooms to the pot and cook until they release their liquid and start to brown, about 10 minutes.
  3. Sprinkle the flour over the mushrooms and stir to coat. Cook for another minute.
  4. Slowly pour in the broth, stirring constantly to prevent lumps from forming.
  5. Bring the soup to a simmer and cook for about 15-20 minutes, until the mushrooms are tender.
  6. Stir in the milk or cream and heat through. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Feel free to adjust the seasonings and consistency to your liking. You can also add other ingredients like thyme, bay leaves, or a splash of white wine for extra flavor.
