Instructions

  1. Season the Chicken
    In a large bowl, combine garlic, ginger, olive oil, cardamom, cumin, cinnamon, cloves, turmeric, black lime, salt, and pepper. Rub mixture all over the chicken pieces. Marinate for at least 1 hour (or overnight in the fridge).
  2. Brown the Chicken
    Heat a heavy Dutch oven over medium-high. Add chicken, skin-side down, and sear until golden (3–4 minutes per side). Remove and set aside.
  3. Build the Rice Base
    In the same pot, add onions and a pinch of salt. Sauté until soft and lightly caramelized (6–8 minutes). Return chicken pieces atop the onions.
  4. Add Rice & Stock

  5. Seal & Steam
    Cover pot tightly (use a layer of foil under the lid for a better seal). Reduce heat to lowest setting and steam 30–35 minutes—until rice is fluffy and chicken is cooked through.
  6. Rest & Garnish
    Turn off heat and let rest, covered, 10 minutes. Transfer chicken and rice to a serving platter. Garnish with cilantro and toasted almonds if desired.
