Turkey bean chili is a nutritious dish made with ground turkey, beans, tomatoes, and a variety of spices. It’s a healthier alternative to traditional beef chili.
1 lb. ground turkey 1 can (141⁄2 oz weight) diced toma- toes 1 can (15 oz weight) kidney beans, rinsed and drained 1 can (4 oz weight) diced green chilies 1 small onion, diced 1 clove garlic, minced 1 tbsp chili powder 1 tsp ground cumin 1⁄2 tsp paprika 1⁄4 tsp cayenne pepper Salt and pepper to taste Chopped fresh cilantro (optional)
Directions
Put the stockpot over medium-high heat. Add ground turkey and cook until browned, breaking it into small pieces as it cooks. Add chopped onion with garlic and cook for 5 minutes.
Add the diced tomatoes, kidney beans, green chilies, chili powder, cumin, paprika, cayenne, salt, and pepper. Stir to combine. Take the chili to a boil, then reduce heat to low and let simmer for 37-40 minutes.
Serve hot, and top with chopped cilantro if desired.
