SWEET POTATO SHEPHERD’S PIE

Ingredients


1 sweet potato, peeled and cubed
1 tbsp butter
¼ cup heavy cream
1 lb. ground beef
½ onion, chopped
1 clove garlic, minced
1 tbsp tomato paste
½ cup beef broth
1 tsp Worcestershire sauce
Salt and pepper to taste
1 cup frozen mixed vegetables
½ cup shredded cheddar cheese

Preparation

  1. Preheat oven to 375°F. Boil sweet potato in a pot of salted
    water until tender, about 10-15 minutes. Drain and mash with
    butter and heavy cream. In a non-stick skillet, fry ground beef
    over medium-high heat. Add chopped onion with garlic, and
    cook until softened.
  2. Stir in tomato paste, beef broth, Worcestershire sauce, salt,
    and pepper. Mix in frozen vegetables and simmer until heated
    through. Transfer the beef mixture into a baking dish and top
    with mashed sweet potato.
  3. Sprinkle shredded cheddar cheese on top. Bake for 23-25
    minutes or until heated through.
