MORNAY SAUCE

Sauce Mornay is a classic French sauce that’s essentially a béchamel sauce (a white sauce made from a roux of butter and flour cooked in milk) enriched with cheese. It’s creamy, rich, and versatile, commonly used in dishes like macaroni and cheese, vegetables, eggs, and fish. Here’s a basic recipe for Sauce Mornay.

INGREDIENTS

Unsalted Butter: 2 tablespoons – For a rich, smooth base.

Shallots: 1, finely chopped – Adds a subtle, sweet flavor.

Garlic: 1 clove, minced – For a hint of aroma.

Flour: 2 tablespoons – To thicken the sauce.

Dry White Wine: 1/4 cup – Adds depth and complexity.

Whole Milk: 2 cups, warmed – For creaminess.

Gruyère Cheese: 1/2 cup, grated – For a nutty, sophisticated flavor.

Parmesan Cheese: 1/4 cup, grated – Adds a savory sharpness.

Truffle Oil: 1 teaspoon – For a luxurious, earthy aroma.

Salt and White Pepper: To taste.

Fresh Nutmeg: A pinch, freshly grated – Enhances the flavors.

Fresh Thyme: 1 teaspoon, finely chopped – For an herbal note.

DIRECTIONS

Sauté Shallots and Garlic: In a saucepan, melt butter over medium heat. Add shallots and garlic, sautéing until soft and translucent.

Roux Formation: Stir in flour and cook for about 2 minutes, ensuring it doesn’t brown.

Deglaze with Wine: Pour in the white wine, stirring continuously, and cook for a minute to reduce slightly.

Adding Milk: Gradually whisk in the warm milk, avoiding lumps. Bring to a simmer and cook until the sauce thickens.

Cheese Incorporation: Reduce heat to low. Add Gruyère and Parmesan cheese, stirring until melted and smooth.

Flavor Enhancement: Stir in truffle oil, salt, white pepper, and nutmeg. Adjust the seasoning to your taste.

Final Touch: Add fresh thyme, stir well, and remove from heat.

Serving Suggestions:

  • Drizzle over steamed vegetables, seafood, or use in sophisticated pasta dishes.
  • Serve with gourmet toast points or as a sauce for a fancy mac and cheese.

This gourmet Mornay sauce, with its blend of fine cheeses, white wine, and truffle oil, is sure to add an elegant touch to any dish, perfect for a special occasion or when you want to impress your guests with your culinary skills.
