Albania’s beloved baked lamb and yogurt casserole, deeply rooted in the country’s culinary traditions:

In the most authentic Tavë Kosi recipe, the dish typically focuses on the simplicity of yogurt, lamb, and eggs without the use of herbs. However, in some regional variations or modern adaptations, a few herbs might be added for extra flavor. These herbs could include:

  • Fresh oregano or dried oregano: Adds a Mediterranean aroma and complements the lamb.
  • Fresh parsley: Commonly used as a garnish or to bring a mild, fresh contrast to the richness of the dish.
  • Mint: In some Albanian regions, mint is occasionally added to enhance the yogurt mixture with a refreshing touch.

However, the classic version of Tavë Kosi usually does not rely heavily on herbs, focusing on the natural flavors of the lamb, yogurt, and eggs. If you want to keep the dish authentic, it’s best to go light on herbs or omit them entirely and here’s how you make it!

Ingredients:

  • 1 lb (450g) lamb shoulder or leg, cut into chunks
  • 1 cup (200g) rice
  • 3 tablespoons butter (unsalted)
  • 2 tablespoons flour
  • 2 cups (500g) plain yogurt (preferably full-fat or homemade)
  • 4 eggs
  • 3 garlic cloves, minced (optional but adds extra flavor)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Prepare the lamb:
    • Preheat the oven to 350°F (175°C).
    • Season the lamb chunks generously with salt and pepper.
    • Heat olive oil in a large pan or pot over medium heat, and brown the lamb pieces on all sides for 8-10 minutes. Transfer the browned lamb to a baking dish.
  2. Optional Rice Layer:
    • If you’re using rice, rinse it under cold water. Place the partially cooked lamb on the bottom of a baking dish.
    • Add the rice around the lamb, making sure the rice is evenly spread across the bottom of the dish.
  3. Make the yogurt sauce:
    • In a separate saucepan, melt the butter over low heat. Add the flour to the melted butter, whisking constantly to make a roux. Let it cook for 2-3 minutes until golden.
    • Slowly pour in the yogurt, stirring constantly until smooth and well blended.
    • In a bowl, beat the eggs, then gradually add them to the yogurt mixture, stirring to combine.
    • If using garlic, mix it into the sauce now. Season with salt and pepper.
  4. Assemble the dish:
    • Pour the yogurt-egg mixture over the lamb (and rice, if included) in the baking dish. The lamb should be well covered by the sauce.
  5. Bake the casserole:
    • Place the dish in the oven and bake for 40-50 minutes or until the top is golden brown, and the yogurt mixture is set and slightly puffed up.
  6. Serve:
    • Remove the Tavë Kosi from the oven and let it rest for 10 minutes before serving. It’s traditionally enjoyed on its own or alongside a light salad.

Notes:

  • Yogurt: Authentic Tavë Kosi is made with homemade or high-quality full-fat yogurt, which gives the dish its rich and tangy flavor.
  • Rice: Rice is optional but commonly used in some versions. You can adjust the amount or leave it out entirely for a more traditional version.
  • Garlic: Not all recipes include garlic, but it’s a popular addition for more flavor depth.
