INGREDIENTS
1 tbsp olive oil
1 onion, chopped
3 garlic cloves, minced
1 tsp ground cumin
1 tsp ground coriander
¼ tsp smoked paprika
¼ tsp ground turmeric
1 cup red lentils
4 cups vegetable broth
1 (14½ oz weight) can of diced
tomatoes
2 cups chopped kale
Salt and pepper to taste
Lemon wedges for serving
DIRECTIONS
Heat one tbsp oil in a stockpot over medium heat.
Add onion with garlic and sauté for 2-3 minutes until softened.
Add cumin, coriander, smoked paprika, and turmeric, and cook for another
1-2 minutes until fragrant.
Add red lentils, vegetable broth, and diced tomatoes to the pot.
Stir to combine.
Take the mixture to a boil, then decrease the stove heat and simmer for 27-30 minutes until the lentils are
tender.
Stir in chopped kale and cook for another 3-5 minutes until kale is wilted.
Add salt and pepper to taste. Serve hot with lemon wedges.
