INGREDIENTS
4 slices bacon
4 large eggs
2 tbsp unsalted butter
2 tbsp heavy cream
Salt and black pepper, to taste
½ cup shredded cheddar cheese
2 low-carb tortillas
Optional toppings: diced tomatoes,
sliced avocado, chopped cilantro.
DIRECTIONS
Put the skillet over medium-high heat, and cook the bacon until crispy.
Remove and drain on a paper towel, then crumble into small pieces.
In a bowl, whisk the eggs with heavy cream, salt, and black pepper.
In the same skillet, melt the unsalted butter over medium heat.
Pour the egg mixture and stir gently until the eggs are set but moist.
Sprinkle the shredded cheddar cheese over the eggs and cover the skillet with a lid until the cheese is melted.
Heat the low-carb tortillas in a separate skillet or microwave.
Divide the scrambled eggs and cheese mixture between the two tortillas to assemble the burritos.
Top with the crumbled bacon and any optional toppings.
Roll up the tortillas and serve immediately.
