INGREDIENTS
2 cups riced cauliflower
2 tbsp. coconut oil
2 eggs, beaten
½ cup diced onion
½ cup diced carrot
½ cup diced celery
1 cup cooked chicken, chopped
¼ cup tamari sauce
1 tsp. garlic powder
Salt and pepper, to taste
Green onions, chopped (optional)
DIRECTIONS
Heat two tbsp coconut oil in a large skillet over medium heat.
Add beaten eggs and scramble until cooked.
Remove eggs from the skillet and set aside.
In the same skillet, add onion, carrot, and celery. Sauté until vegetables are tender.
Add rice cauliflower, cooked chicken, tamari sauce, garlic powder, salt, and pepper to the skillet.
Stir until everything is combined. Cook for 8-10 minutes or until cauliflower is cooked to your liking.
Add scrambled eggs back to the skillet and stir to combine.
Garnish with chopped green onions, if desired.
