Ingredients
2 large mud crabs, cleaned and cut into pieces
2 tablespoons oil
1 large onion, finely chopped
5 cloves garlic, minced
1-inch ginger, minced
3-4 red chillies, chopped
2 tablespoons chili sauce
2 tablespoons tomato sauce
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon sugar
1 cup chicken broth
2 eggs, beaten
1 tablespoon cornstarch mixed with 2 tablespoons water
Salt to taste
For Garnish
- Fresh coriander leaves
- Sliced red chilli
Instructions
- Clean the crabs thoroughly and cut them into pieces. Crack the claws slightly to help them cook through.
- Heat the oil in a large wok or deep pan over medium heat. Add the chopped onion, minced garlic, and ginger. Sauté until fragrant and the onions are translucent.
- Add the chopped red chillies and cook for another minute.
- Stir in the chili sauce, tomato sauce, soy sauce, oyster sauce, and sugar. Mix well to combine.
- Add the crab pieces to the wok and stir to coat them with the sauce. Pour in the chicken broth, cover, and let it simmer for about 7-12 minutes, or until the crab is cooked through.
- Add the cornstarch mixture to the wok and stir until the sauce thickens.
- Slowly pour the beaten eggs into the wok while stirring gently to create a silky texture in the sauce.
- Taste and adjust seasoning with salt if needed.
- Transfer the cooked chilli crab to a serving dish. Garnish generously with fresh coriander leaves and sliced red chilli.
- Enjoy the chilli crab with steamed rice or mantou (Chinese steamed buns/fried buns).

- Adjust the number of chillies based on your spice preference.
- For a richer flavor, you can add a splash of Chinese rice wine or Shaoxing wine to the sauce.
