SINGAPORE CHILLI CRAB

Singapore chilli crab is a famous and beloved dish in Singaporean cuisine, known for its rich, tangy, and slightly spicy sauce. The dish features fresh crabs cooked in a thick, savory tomato and chili-based sauce, often enhanced with eggs to create a luscious texture.  Here’s how you make it!

Ingredients

2 large mud crabs, cleaned and cut into pieces

2 tablespoons oil

1 large onion, finely chopped

5 cloves garlic, minced

1-inch ginger, minced

3-4 red chillies, chopped

2 tablespoons chili sauce

2 tablespoons tomato sauce

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon sugar

1 cup chicken broth

2 eggs, beaten

1 tablespoon cornstarch mixed with 2 tablespoons water

Salt to taste

For Garnish

  • Fresh coriander leaves
  • Sliced red chilli

Instructions

  1. Clean the crabs thoroughly and cut them into pieces. Crack the claws slightly to help them cook through.
  2. Heat the oil in a large wok or deep pan over medium heat. Add the chopped onion, minced garlic, and ginger. Sauté until fragrant and the onions are translucent.
  3. Add the chopped red chillies and cook for another minute.
  4. Stir in the chili sauce, tomato sauce, soy sauce, oyster sauce, and sugar. Mix well to combine.
  5. Add the crab pieces to the wok and stir to coat them with the sauce. Pour in the chicken broth, cover, and let it simmer for about 7-12 minutes, or until the crab is cooked through.
  6. Add the cornstarch mixture to the wok and stir until the sauce thickens.
  7. Slowly pour the beaten eggs into the wok while stirring gently to create a silky texture in the sauce.
  8. Taste and adjust seasoning with salt if needed.
  9. Transfer the cooked chilli crab to a serving dish. Garnish generously with fresh coriander leaves and sliced red chilli.
  10. Enjoy the chilli crab with steamed rice or mantou (Chinese steamed buns/fried buns).

Tips:

  • Adjust the number of chillies based on your spice preference.
  • For a richer flavor, you can add a splash of Chinese rice wine or Shaoxing wine to the sauce.
  • Freshly cracked black pepper can add an extra layer of flavor to the dish.
