SHISH KEBAB

Yow its Fri-yay! and I wanted to share this beautiful Shish Kebab recipe with you! Excite your fam for weekends BBQ gathering and turn your palate for a Middle Eastern flare!


INGREDIENTS

1.5 pounds (680g) of boneless lamb, beef, chicken, or a mix of your choice, cut into 1-inch (2.5 cm) cubes
1/4 cup (60ml) of olive oil
3 cloves of garlic, minced
2 tablespoons of plain yogurt
2 tablespoons of lemon juice
1 teaspoon of ground cumin
1 teaspoon of chilli flakes
1/2 teaspoon of ground coriander
Salt and pepper to taste
Vegetables of your choice (bell peppers, onions, and cherry tomatoes work well)
Wooden or metal skewers


DIRECTIONS

In a bowl, combine the olive oil, minced garlic, plain yogurt, lemon juice, cumin, chilli flakes, coriander, salt, and pepper. Mix well to create a flavorful marinade.

Place the meat cubes in a large resealable bag or a shallow dish. Pour the marinade over the meat, making sure it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 1-2 hours, or even overnight for maximum flavor.

If you’re using wooden skewers, be sure to soak them in water for at least 30 minutes to prevent them from burning during cooking. This step is important.

As the meat marinates, prepare your vegetables by cutting them into chunks or slices. Once the meat is ready, thread the marinated meat and vegetables alternately onto the skewers, creating a balanced mix of flavors and colors.

Preheat your grill to medium-high heat. You can also use a broiler if you don’t have a grill.

Place the skewers on the grill, and cook for about 10-15 minutes, turning them occasionally. The cooking time may vary depending on your choice of meat and desired doneness. Lamb and beef are often preferred slightly pink in the middle, while chicken should be cooked through. Check for your preferred level of doneness.

Serve the shish kebabs hot with your choice of accompaniments, such as pita bread, rice, hummus, or a fresh salad. Garnish with fresh herbs and a drizzle of olive oil if desired.
